I love cilantro so much. I’ve said it before, I could eat a full on cilantro salad without blinking an eye. Besides tasting so fresh and delicious, cilantro has amazing health benefits. It it said to have anti-inflammatory & anti-bacterial benefits and it could help aid in the removal of heavy metals from the body, which is something all people should be thinking about. Cilantro contains antioxidants and there are studies that suggest it could even prevent arthritis and memory loss in old age. Sometimes herbs are overlooked as just flavoring whims to use when they fit into a meal. They are so delicious and add so much flavor (which is great for all cooking, but let’s admit that a lot of vegan cooking needs all the help it can get). So let’s start building meals around these incredibly healthful herbs! Cilantro is delicious in curries, Latin food, mixed in salads and even in scrambled eggs / scrambled tofu in the morning.
